Bread baking has a reputation for difficulty that is entirely undeserved. The chemistry is simple, the ingredients are cheap and minimal, and the rewards โ fresh bread smell, satisfaction of making something with your hands, the taste of a warm loaf โ are disproportionate to the effort.
Why This Matters
Start with a simple white loaf. Formula: 500g strong white flour, 7g dried yeast, 10g salt, 300ml warm water, a tablespoon of olive oil. Mix until combined into a rough dough, knead for ten minutes until smooth. This is the most important stage โ kneading develops the gluten that gives bread its structure.
Common Mistakes to Avoid
The first rise takes one to two hours at room temperature, or overnight in the fridge for more developed flavour. The dough should roughly double. You are watching the dough, not a timer. It is ready when doubled.
A Practical Approach That Works
Shape the loaf, place in a tin, leave for the second rise of 45 minutes to an hour. Slash the top with a sharp knife. Bake at 220 degrees for 25 to 30 minutes until golden and hollow-sounding when tapped underneath.
Final Thoughts
The most common beginner mistakes: water too hot (kills yeast), insufficient kneading, and cutting into the loaf before it has cooled. The structure collapses and the inside goes gummy. Wait at least 30 minutes after baking before cutting. The wait is worth it.
